Calissons are white diamond-shaped sweetmeats, made from ground almonds and candied fruits.  The Léonard Parli confectionary is one of the oldest in Aix-en-Provence. Founded in 1874.  These calissons are particuarly fantastic because they finish with a note of rose. Available at Bien Manger.
