Tortilla Española - Comfort Food for the Spanish Man
Both elegant and homey, the Spanish tortilla is the go to meal for any Spaniard in need of a pick-me-up. Madrileño pride themselves on the variety of tortillas offered in the city but ask any Madrileño and they will say, “My mom’s is the best”. Go back to the basics and look up a recipe with eggs, onions, potatoes, and some good Spanish olive oil.
